I Got The Bike....

Well, here it is....my new Huffy Vintage-styled bicycle

It is so pretty.  So vintage looking with it wide, white-walled tires.  I cannot wait to go for a ride.

I am just hoping I don't seriously hurt myself... I am going to start off slow.

I am also on the look-out for a cool helmet.  I found this one brand, Yakkay, and they are so adorable but, wow, are they expensive.

As a true "Junker", I am looking for a knock-off, copycat or something cheap.  A friend of mine told me to get a baseball helmet and there is a girl here in town that is painting them.  How cool is that.  That is what I may have to do....hmmmm, what to put on that helmet!!  I think I know!!

Stay tuned for more bicycle adventures and of course Junk Diva treasures...

That's LIFE....
As the picture says,
LIFE...

On Sunday afternoon, I was walking out of Walmart with my new vintage-styled bicycle with vintage bicycle dreams floating around in my head. Then I heard my husbands voice saying that the front tire was warped. Pop!!! goes my dream.

So....we walked it back in and showed it to the Walmart people.  They said they had one in back and would put it together for me and I could pick it up Monday. They went ahead and gave my money back (which should have been a sign for me but I am such a trusting soul).

So, I sent a text to my biking gal pals and told them my bike was coming so get ready for our wonderful bike riding adventures...

Well...I went to pick up my new bicycle with such child-like enthusiasm...and....You guessed it, no bike!!

So, tomorrow, I am out on the hunt for that perfect vintage bicycle.  Wish me luck!!

Wouldn't you love it if gas were $1.23 a gallon.
What a great sign.
 Old Bicycle for Yard Art!!

This old bike would make a great yard art feature.

Add a basket....
Plant a red geranium in basket...
Park the bike under a big tree...

Great Curb Appeal!!

Come by the store and we will fix you up...except for the red geranium!!

Let's Go Ride A Bike....

I just bought a vintage styled bicycle today!!

I am so excited about my future bicycle riding. I am excited about getting the extra exercise that I need but also hoping to discover places that I can ride and just enjoy the outdoors and the simple pleasure of slowing life down for just a moment.

Quite frankly, I am somewhat scared of riding any kind of bike on our roads.  I don't like going with the traffice since I prefer to see who is going to run me off the road or completely run me over!! And I am not as agile as I used to be on a bike but of course, I'm not as young as I used to be either.

I am going to be looking for wonderful, beautiful places to ride.  I am also already planning on accessorizing my vintage bike with a wicker basket, a ringing bell and of course only the cutest of helmets!!

Watch for pictures and stories of my adventures.

You might watch for the ambulance too.  My bike will be strapped to the back since I will not let them leave it behind!!

 “What’s for dinner?”

Heard that before??

If you’re like me you get tired of fixing the same old thing, but you are at a loss for something quick and easy to fix.
After working all day and then coming home to catch up on all those "home" chores, I really don't want to spend a great deal of time in the kitchen.

So... I am on the hunt for recipes that are quick and easy, healthy, easy on my budget and  not the "same old thing".

I found this recipe on the internet and I am determined to try it out this week.  Doesn't sound hard except maybe for the gravy part.  Somehow I always mess up the gravy.

Chicken Bacon Roulades

Ingredients

  • 4 shallots, thinly sliced
  • 10 bacon slices (about 1/2 pound)
  • 4 skinless boneless chicken breast halves (about 1 1/2 pounds total)
  • Lemon pepper seasoning to taste (or ground black pepper with a little lemon zest)
  • 6 Tbsp grated Parmesan (about 1 ounce)
  • 1 Tbps olive oil
  • 1 clove of garlic, minced
  • 1/3 cup dry white wine  (I don't have this so found out you can substitute white grape juice, apple juice or chicken broth)
  • 2 Tbsp unsalted butter
  • 1 1/2 Tbsp flour
  • 1 1/4 cups chicken broth
  • 1/4 cup heavy cream

Method

1 Working in batches, cook the bacon over medium heat in an ovenproof heavy skillet, until lightly brown but still flexible (not crisp). Place the bacon on paper towels to drain. Cook the shallots in the remaining bacon fat over low heat, stirring, until softened. Transfer shallots with a slotted spoon to a small bowl and leave any fat remaining in skillet. Preheat oven to 300°F.
2 Place each chicken breast half between 2 sheets of plastic wrap. With smooth side of a meat pounder pound each breast to 1/8-inch thickness. Discard plastic from boned side of each breast. Sprinkle chicken with lemon pepper (or ground black pepper and a little lemon zest) and salt. Place 2 1/2 slices of bacon lengthwise (parallel with grain of flesh) along middle of each breast. Top with shallots and Parmesan. Using plastic wrap to help you, tightly roll up each breast lengthwise, tucking in the ends to enclose the filling. Secure seams with wooden toothpicks.
3 Add 1 Tbsp olive oil to reserved fat in skillet and heat over medium high heat. Brown roulades (chicken) on all sides, about 5 minutes total. Transfer the skillet to middle of oven and bake roulades until just cooked through, 20 to 25 minutes. (Note: we found that our skillet didn't fit in our oven, so we transfered the roulades to a smaller pan.)
4 Transfer chicken to a plate with tongs and keep warm, covered with aluminum foil. Pour off fat from skillet. (Careful! The handle is hot, use an oven mitt.) Add wine (or substitute) to the skillet and deglaze over medium high heat, scraping up brown bits. Boil wine until reduced to about 1 tablespoon. Add garlic and butter. Cook mixture over medium low heat, stirring, for 1 minute. Add flour and cook roux, stirring, 1 minute. Add broth and cream and bring to a boil, whisking. Simmer the sauce, whisking, 2 minutes. Pour through a fine mesh sieve into a small saucepan. Keep sauce warm. Remove the wooden toothpicks from roulades and cut crosswise into 1/2-inch slices. Spoon some sauce in center of each of 4 plates and arrange roulade slices decoratively on sauce.
Serves 4.
If you try, please let me know how it goes. Also, tell me if you think this recipe was a good one to do after a day at work.

Old Train Depot Fixtures....

Great new light fixtures that we have at Junk Divas!  The photo on the left is what the fixture looks like hanging and the photo on the right is a top shot.  The left photo is dark so the real color is that of the photo on the right.

Fixtures came out of the depot here in Paris, Texas.  When it was remodeled, these were taken out.  What a shame.

We are having them re-wired and will hopefully have about 6 fixtures.
Cost $75

New Chairs....

Our Twin Chairs!
Just arrived at the store and they are mint condition.  We love them and they are so comfortable.
So excited since as of today I have wireless internet here at my home.  I live a little ways out of the city of Paris and dial up was the only service available.  I can cook a meal in the time it takes for dial up to load something!! So...I have not had internet for a few years.  Everytime I work on our blog, I had to go somewhere....makes it a little more difficult to do.  BUT...as of tonight I have real wireless internet!!  Yipee... now I should be able to improve my blogging skills and keep alittle more current!!
